I think you can get the rice noodles at any supermarket these days... the Blue Dragon brand is pretty good, I tried their rice vermicelli the other day. Santa Maria has rice noodles too.
When it comes to rice noodles I'm very into the Vietnamese style, pho. I usually use some beef or chicken broth to make the soup. Then add the cooked noodles and some kind of meat, either some sliced beef, pork, crabsticks or a sliced fried egg. Add some thinly sliced onion, bean sprouts, basil or mint leaves, then some lime or lemon juice on top of it all. You could add some chili or hot sauce as well, but I can't eat really strong stuff so I usually skip that. You can basically add whatever you want, there's lots of room for improvising. ;)
